New Year's salmon with kale, pomegranate, orange and straciatella

New Year's salmon with kale, pomegranate, orange and straciatella

160 g smoked salmon 

250 g kale

1 pomegranate (50 g. seeds)

2 oranges

100 ml of soy

50 ml maple syrup

1 teaspoon toasted sesame oil

1 tbsp. grated fresh ginger

1 fresh mozzarella

50 ml whipping cream

Salt and pepper




  1. Pick the kale into bite-sized pieces, rinse it thoroughly and discard the water.
  2. Finely grate the peel of an orange into a bowl and set it aside for the dressing.
  3. Cut off the top and bottom of the orange and cut off the peel with a sharp knife. Free the orange fillets by cutting on each side of the orange fillet close to the white membrane.
  4. Make a cut in the top around the stem of the pomegranate, don't cut through the seeds just the white - just like when you cut the top of a pumpkin. Peel off the shell so you can see the kernels. Make a cut down the outside of the pomegranate where the white membrane runs. Then you can easily peel off the shell and split the pomegranate like orange wedges, from there you can easily peel out the seeds.
  5. Whisk soy, maple syrup, toasted sesame oil, finely grated ginger and finely grated orange peel together. Pour it over the cabbage and massage it well with your hands to soften the cabbage.
  6. Stracciatella: In a separate bowl, tear the mozzarella into thin strips, season with salt, pour on the cream and use two forks to mix and tear it apart well.
  7. Place the salmon on a clean board and cut it into thin slices.
  8. Arrange the cabbage as a small nest in beautiful bowls or deep plates, place a tablespoon of straciatella in the center of the cabbage nest and first place 4-5 thin slices of salmon around it, then weave the orange fillets in between. Finish by sprinkling pomegranate seeds over the entire dish.



All the elements can easily be prepared in time and preferably the day before, just wait to massage the cabbage and prepare the dish itself, so you have plenty of time to do other things in time for the big party.
