Banana bread - with sweet potato

Banana bread - with sweet potato

Prep time: 10 minutes
Cooking time: 45-50 minutes - Or until golden brown and firm.
Recipe Ingredients:
  • 300 g baked sweet potato
  • 4 eggs
  • 45 g rolled oats (1/2 cup) (+ 2 tbsp if your bananas are huge... then add a tbsp more)
  • 7 dates
  • 3 bananas
  • 1 tsp vanilla powder (or extract
  • 1/2 tsp cinnamon
  • 1/2 tsp. cardamom
  • 3 tsp baking powder
  • 1/2 tsp. salt
  • 100 g melted coconut oil or similar (or butter if you wanna go nuts) If you leave fat out your cake will be watery and not as yummy.
Optional - shredded coconut for the baking tin.
You will need a bread tin to bake it in.
HOW TO:
Step pre 1.
If you have not baked the sweet potato, NOW is the time to crank up that oven to 200 *c/395*F and place those whole sweet potatoes on a baking tray with the skin on and bake until they are completely tender. Cool them down before step 2.
Step 1.
Now that you have the baked sweet potato - get your blender out. Pre-heat (or cool down) the oven to 170*c/340*FTHIS IS IMPORTANT, Turn the oven temperature down NOW!
Step 2.
Blend all the ingredients EXCEPT the coconut oil AND 1,5 bananas
Blend until smooth.
Step 3.
Then add in the melted coconut oil whilst blending at low-medium speed.
Step 4.
Grease your bread tin and dust it with oat flour or shredded coconut.
Step 5.
Peel and cut the remaining 1,5 bananas length wise and half them if they are too long. You can basically cut them however you like, this is to decorate your batter with.
Step 6.
Pour the batter into the tin and arrange the bananas in a creative pattern - remember it's your time to shine when you serve this cake up!
Step 7.
Bake it! 45-50 minutes minutes. until it's firm and golden brown all over.
You might want to rotate the bread tin inside the oven to ensure even baking.
Step 8.
The banana bread is done when it is golden brown and doesn't wobble.
Cool down and serve.
TIP: Make enough ! Freeze it for later.
